1 Opal Apple thinly sliced into half moons (or your favorite kind of organic apple)
2 Celery Stalks thinly sliced on the diagonal (optional if you’d like an extra crunch)
1 Lemon quartered
2 Cups Arugula
2 Tablespoons Sunflower Seeds
2 Tablespoons Olive Oil
2 Hard Boiled Eggs cut in half (or your favorite protein side)
Salt and Pepper to Taste
