Apple and Sunflower Seed Salad

Apple and Sunflower Seed Salad

This light and fresh salad is so versatile.  It can stand alone or be paired with a protein for the perfect low carb summer meal.  Not to mention, sunflower seeds are an excellent source of essential fatty acids, vitamins and minerals.


Ingredients

1 Opal Apple thinly sliced into half moons (or your favorite kind of organic apple)

2 Celery Stalks thinly sliced on the diagonal (optional if you’d like an extra crunch)

1 Lemon quartered

2 Cups Arugula 

2 Tablespoons Sunflower Seeds

2 Tablespoons Olive Oil 

2 Hard Boiled Eggs cut in half (or your favorite protein side)

Salt and Pepper to Taste


Directions

  • Place arugula, apple, celery, sunflower seeds into a salad bowl
  • Add olive oil and a squeeze or two of lemon juice
  • Toss together until evenly coated
  • Plate salad on a dish and top with hard boiled eggs
  • Season with salt and pepper
